At the Good Earth Community Garden/LA Green Ground's Earth Day 2023 event, Mary MacVean gave a demo, "Eating Your Scraps". She explained how you can use parts of vegetables that are often thrown away.
A few people asked that her tasty carrot top pesto recipe be added to our LA Green Grounds website.

CARROT TOP PESTO RECIPE
Makes about 1 cup
INGREDIENTS:
2 packed cups cleaned carrot tops*
1 garlic clove, peeled.
salt and pepper to taste
1/2 cup nuts**
1/2 cup olive oil, the tastiest you have
Put everything in a food processor or blender and process to a spreadable consistency. Use on pasta, bread, crackers or as a dip.
Notes:
*2 cups of greens -- you can use basil, or spinach or other green for 1 cup and carrot tops for the other. Or any combination that suits you.
**Walnuts, cashews, pistachios all can be used.
